Oatmeal Spelt Muffins

A baking project was long overdue. So I made muffins. Oatmeal spelt muffins, to be exact – in blueberry, chocolate and walnut varieties. I have never made muffins from oatmeal before, and I didn’t follow any specific recipe. They turned out just fine – had the perfect moistness inside. (One sampler said a little too moist for her taste, it was fine for me.) So simple to make. So cute.

Oatmeal Spelt Muffins 


Oatmeal Spelt Muffins

makes 6 small muffins


3/4c Instant oats  (or 1/2c)
1/4c Spelt flour (or 1/2c if use 1/2c oats)
1T Sugar (more if you want really sweet, enough if you are adding fruit/chocolate, etc.)
1t Baking powder
1/2t Salt
1/2t Cinnamon (optional, but I always add cinnamon!)
1t Instant coffee (optional, but I opened a bottle, took a whiff and just couldn’t resist)

1/2c Milk
1 egg, or 2 egg whites, lightly beaten 

Blueberries, chopped nuts, chocolate chips, dried fruit, etc.

1. Preheat oven to 350F
2. Mix together all dry ingredients well.
3. Mix wet ingredients and combine with dry.
4. Fold in fruit/nut/chocolate of your choice, singly or in combination, a little or a lot, or not.
5. Spoon batter into paper-lined or lightly greased muffin tin, about 3/4 full.
6. Bake 20-25 minutes. Tops should be golden and slightly springy. Remove and enjoy.
